As was pointed out above, I think the basic idea will be for the first movie to cover The Hobbit in it's entirety. The second movie is meant as a bridge between The Hobbit and the other LoTR movies. I'd imagine it would mostly come from Tolkiens other stories, footnotes, and expansive appendixes for stories to bring the whole series together. Jackson already did something similar in the original trilogy if I remember correctly. I think most of the love story stuff between Aragon, Arwen, and Eowyn was mostly all taken from these other places as they weren't that detailed in the original books. As this point, after what he's done already, I trust Jackson completely.
