FWIW I raised a thread about it and it was (almost unanimously) agreed not to use 'uncredited' for every single entry and that the cast list provided separately in the extras (or online by the official site) was an appropriate 'first source' given the situation.

Sounds fair to me.  Did your contrib notes include the phrase "NEED TO KNOW"?

I was watching a bunch of short films with some friends tonight, and the credits for Atama-Yama (Mt. Head) jump around a bit and do the staticky "film-effect" thing.  Combined with being hand-written style rather than a typed appearance, I think there'd be a lot of frustrating freeze-framing to enter those credits (although I did notice that in a menu some crew was listed in a typed format).

I haven't yet gotten around to looking closely at the credits on my Funky Squad DVD, but I have noticed that during the opening credits, the actors are credited under false names (in keeping with the parody that they're doing).
i.e. They're playing actors playing characters in a TV show.
I'm pretty sure they're credited by their real names in the end credits, but I'm sure if this were a series like Buffy, Friends or Seinfeld in R1 there'd be a lengthy ping-pong battle ensuing.

Aren't all the Fahrenheit 451 cast credits spoken (like example #3) rather than written down (to go along with the theme of the movie)?

In the short film Atama-Yama (Mt. Head), the hand-written credits shake onscreen and are consistently blurry.  I think if/when I get around to doing the credits for The Animation Show: Vol. 1 (which this short is on), I'll be using the credits list featured with each short, in addition to freeze-framing to get the data.

I forget which movie I was watching, but the cast faded in one at a time, and there were several onscreen at once (since I like freezing a block of credits in view).

In one The Goodies episode (I think Movies, the credits move forwards, then backwards, then continue forwards, reverse for a bit, etc.  Thank goodness for the pause button!

I have actually done the credits for The Adventures of Robin Hood: Season 1 in R2 and can verify the actors credits are a nightmare because they can play multiple roles within an episode and Season 2 which I am doing is also brain teasing.
